A few days ago I cam across a recipe on.... yup you guessed it Pinterest (lol) for Frito Taco Pie. Taco's are a biweekly menu filler in our house so I am always looking for "new" versions of the oh so basic taco. So when I found this I knew it could be a winner: I mean think about it, it's like a dinner version of the Taco in a bag. And to top it all off it's fast and simple to make; two of the best words in cooking for a busy mommy on a little budget :)
What you'll need:
- 1 1/2 lb. ground beef
- 1 package taco seasoning mix
- 1/2 water
- 1 can crescent rolls
- 1 cup sour cream + extra for topping for those (like my family) LOVE sour cream
- 1 cup shredded cheddar cheese (I used 1/2 cup shredded and 1/2 cup Kraft's Mexican)
- 2 cups crushed Frito's
- 1 can (4oz) olives (I omitted these)
- I also had taco sauce, tomatoes, onion and lettuce for people to top their "pie" with
- Heat oven to 400 degrees
- brown meat in a large skillet until there is no pink; drain
- add the seasoning and water (and olives if you are using them) ~ simmer for 5 minutes
- In a greased 9in pie dies place separated crescents rolls with the points going towards the center **press the edges together to form "1" constant crust
- Put 1 cup of the crushed Fristo's on top of the crust
- Add the meat mixture evenly in the pan
- Cover the meat with the sour cream, followed by the cheese, then the corn chips
- Bake for 20-25min; until golden brown
- While its baking cut up tomatoes, onion and lettuce if you are including these
- Let it set about 5 minutes before cutting into it (optional)

Cost of this recipe: about $12
1 1/2 meat - bought 3lbs for $8, only used half so =$4
sour cream - bought tub for $2.5 only used half so =$1.25
seasoning mix - $0.98
Frito's - $2 (on sale) normally around $3 - I didn't use the whole bag so we'll say about $1.25
Cresent Rolls - $1 (onsale) normally $1.78
Onion - less then $0.25
Tomatoes - less then $0.25
Lettuce - $1 (pre-shredded lettuce bag)
Olives - $1
Cheese - both were $1 each (on sale) used half of each = $1
